What a Blast Chiller Does

A blast chiller cools hot food quickly and safely. It pushes very cold air across your food to bring the temperature down fast, far quicker than a fridge or a cold room could.

Speed matters for a reason. Bacteria multiply fastest between 8°C and 63°C — the “danger zone”. Food-safety guidance says cooked food should be cooled to 8°C or below within 90 minutes. A blast chiller typically takes food from around 70°C to 3°C inside that window, so you pass through the danger zone quickly and safely.

That protects your customers, your stock and your food-hygiene rating.

Blast Chilling vs Blast Freezing

The two jobs sound similar but aren’t the same.

You may also see rapid freezing called shock freezer installation. It’s the same principle: freeze fast to lock in quality. Tell us how you work and we’ll recommend the right unit.

Food Safety and Compliance

A blast chiller is a food-safety tool, so getting the numbers right is the whole point. We commission every unit to cool within the times your HACCP plan needs. HACCP is the food-safety management system UK kitchens use to control risks like cooling and storage.

Many units log temperatures automatically, giving you a record for your due-diligence checks. We’ll show you how it works at handover.

All refrigerant work is covered by F-Gas rules — UK laws governing the gases used in cooling systems, because they harm the environment if they leak. Only F-Gas certified engineers may handle them, and all of ours are, plus Level 3 RACHP qualified. Your install is legal, safe and properly signed off.

Most blast chillers take food from around 70°C to 3°C within 90 minutes, in line with food-safety guidance. We commission each unit to hit the times your HACCP plan needs.

A chiller cools cooked food to fridge temperature fast. A blast freezer goes further, freezing to -18°C quickly to protect quality. We install both and can advise which suits your kitchen.
